Somlor Ktis Sach Chrouk

Somlor Ktis Sach Chrouk is the Khmer food. This soup is looks so yummy. This soup can used fish or chicken or pork or shrimp that you like. Let do with me!!!!
Ingredients 
  • 2 kg of pork ribs
  • 1 fresh pineapple
  • 1 pkg of thai basil 
  • 15 stalks of long green bean (chop them to 1 inch)
  • 1/2 lb of Kreung
  • 1 tbsp of tamarind mix 
  • 560 ml of coconut milk
  • 3 tbsp of sugar
  • 3 L of chicken stock
  • 3 tbsp of fish sauce
  • 2 tbsp of shrimp paste
  • 1 tsp of salt
  • 1 can baby corn
  • 1 tbsp of minced garlic 
  • 2 tbsp of oil
  • 2 tbsp of chicken mix
Introduction for Kreung
  • 2 stalks of lemongrass
  • 10-15 small to medium sized kafir lime leave
  • 2 two inch turmeric pieces
  • 1/4 root of galangal (small piece 1-2 inches) 
  • 10 garlic cloves 
  • 2 teaspoon of salt 
Directions
  • In a mortar and pestle add in the finely chopped lemongrass, kafir lime leaves, turmeric and galangal pound the ingredients for 5-10 minutes then add in the 10 gloves of garlic, then proceed to add the 2 tsp of salt pound for another 5-10 minutes and you are done.
Introduction
  1. Get rid of the excess fat and chop them to bite size. 
  2. Chop the pineapple to bite size pieces, take out the middle rind.
  3. Preheat the pot add oil and minced garlic fry until brown. Add Kreung, shrimp paste, fish sauce, chicken mix, sugar and salt fry for 5 minutes.
  4. After 5 minutes add the meat fry and cover for 10-15 minutes. Check on the meat every couple minutes.
  5. After 10-15 minutes add coconut milk and chicken stock cover for 5 minutes. Add pineapple to tenderize the meat.
  6. Add corn, tamarind mix and let it boil for another 5 minutes.
  7. After 5 minutes add green beans and boil for another 5 minutes. At this time you cat taste and adjust as needed then add basil. Ready to serve.
